A unique halal Italian sandwich called "panuozzo" has become a sensation in France, originating from a small restaurant in Mantes-la-Jolie. The sandwich, created by the Trisapori restaurant, is made with a large, crispy pizza dough filled with homemade pesto, grilled vegetables, rocket (a type of leafy green), stracciatella (a soft, fresh mozzarella), and high-quality halal processed meats, including Wagyu beef. The combination of traditional Italian flavors with halal certification has attracted a wide audience, especially among those seeking both quality and dietary compatibility. The restaurant was founded in 2022 by Sabre Benabdalla and his wife, Céline, who left their office jobs after the lockdowns. Initially, they faced challenges in gaining attention, but a chef’s social media post praising the panuozzo as the "best in France" changed everything. The sandwich’s popularity led to long lines outside the restaurant, prompting the couple to hire 18 employees and even employ someone to manage the crowds. The success of the panuozzo has sparked a trend, leading to the rise of similar sandwich shops, or "panuozzerias," in major French cities like Marseille, Lyon, and Roubaix. The demand for the sandwich has also led to attempts to replicate the recipe, including hacking the restaurant’s computers and offering money to employees for insider information. In response, Nabil Bellebcir, co-founder of the PMS group, has launched a franchise called Streetalia, aiming to open 25 locations by the end of the year to capitalize on the growing trend. Meanwhile, Sabre and Céline plan to open a second Trisapori location in Paris to make the sandwich more accessible to customers. Despite the growing fame and business opportunities, the couple has emphasized that their main goal is customer satisfaction rather than financial success. They remain focused on maintaining the quality and authenticity of their product, ensuring that the panuozzo continues to delight their patrons.
