Mory Sacko’s first journey to Japan is explored in the six-episode series Food Samouraï, available on Disney+ starting September 30. Directed by Eric Nebot, the documentary features Sacko alongside actor Omar Sy, chef Pierre Gagnaire, and food journalist Chihiro Masui. Sacko, who recently became a father, embarked on the trip with his pastry chef partner Théo Segretin, supported by his partner Emilie Rouquette, who is also the general director of his restaurant MoSuke. The series follows their exploration of Japan’s traditional elements—fire, earth, water, wind, and emptiness—in cuisine, including encounters with a sushi master, a Kobe beef breeder, a soy sauce maker, a chef-karateka, and a Hiroshima survivor. Sacko initially felt apprehensive about the trip, unsure if Japan would meet his expectations, despite his familiarity with Japanese culture through anime, manga, and films. His first experience with Japanese cuisine was at an entry-level sushi restaurant, where he found the flavors distinct from his West African background but ultimately enjoyable. His fascination with Japanese culture began in childhood, sparked by shows like Club Dorothée, and an obsession with ramen from Naruto and onigiri from Pokémon. During his time working in high-end hotels, including the Shangri-La and Mandarin Oriental, Sacko trained in Japanese cuisine, learning from Japanese chefs. In Japan, he had the opportunity to learn from sushi master Takashi Saito and tempura expert Fumio Kondô. He was particularly moved by his encounter with Sadae Kasaoka, a Hiroshima survivor, whose resilience and humor left a lasting impression. Upon returning to Paris, Sacko aims to push the boundaries of Japanese cuisine, blending it with French, Senegalese, and Malian influences. He plans to visit Japan annually, with his next trip planned for Tokyo in the coming month.
