Chef from Martinique takes leadership role

Louis-Philippe Vigilant, a chef from Martinique, has become the leader of the Loiseau restaurant in Dijon, a three-star establishment historically associated with the famous French gastronome Bernard Loiseau. His appointment marks a continuation of the legacy of the Loiseau family, who have long been influential in French culinary traditions.

Early career and training

Vigilant arrived in Saulieu in 2006 to further his culinary education. He met his future wife and pastry partner, Lucile, at the Loiseau house, and the family's dedication to gastronomy played a key role in shaping his career. His mother, who ran a general store in his hometown of Rivière-Pilote, instilled in him a strong work ethic and appreciation for independence.

Development of culinary skills

Vigilant's early career was driven by a passion for cooking, which he nurtured through experimenting with recipes and later through formal training at the Hotel School of the Marin. Internships with notable chefs in Montpellier helped refine his skills and deepen his understanding of haute cuisine, including the science of sauces and the importance of respecting ingredients.

Expansion of culinary ventures

In 2010, Vigilant and Lucile took over the management of Baux-de-Provence and L'Oustau de Baumanière before returning to Dijon in 2013 to open a new restaurant under the Loiseau name. The restaurant earned a Michelin star within six months, a major achievement in their career. Over the years, the team has expanded their menu to include local and regional products while maintaining a creative approach to food presentation and flavor.

Leadership and legacy

Bérangère Loiseau, president of the Bernard Loiseau Group, said Vigilant was chosen to succeed Patrick Bertron because of his exceptional skills as a saucier, mastery of ingredients, and ability to innovate while respecting the Loiseau legacy. He has been given considerable creative freedom, with about 75% of the menu being his own creations, while certain traditional dishes remain part of the offering.

Restaurant operations and team

The Loiseau restaurant is known for its high standards and offers a variety of menus, including a la carte options and multi-course tasting menus. The team includes Lucile Vigilant as head pastry chef and a dedicated staff in both the kitchen and dining room. The restaurant is open from Thursday to Monday, offering lunch and dinner services, and features an extensive wine list with over 1,200 references.

Personal influences and future goals

Vigilant's personal preferences, such as a favorite destination of the north of Italy and a favorite ingredient of verjus, reflect his evolving culinary journey. His career continues to focus on maintaining the legacy of the Loiseau house while exploring new directions in gastronomy. The goal of achieving a third Michelin star remains a priority, approached with a balanced focus on quality, innovation, and tradition.
