Air France partners with Martinique chef Louis-Philippe Vigilant to offer Caribbean-inspired Business class meals on select flights from the Antilles and French Guiana.
Air France introduces new Business class menu
Starting November 1, 2026, Air France will offer a new menu in Business class on select flights from the Antilles and French Guiana to Paris-Charles de Gaulle. The menu features dishes created by Martinique chef Louis-Philippe Vigilant, who is taking over from Jean-Charles Brédas.Menu highlights Caribbean and Burgundian influences
The new menu includes twelve recipes inspired by the chef’s Caribbean roots and his time at the double-starred restaurant La Côte d'Or in Burgundy. Dishes range from vegetarian options to meat-based meals, including a fish and shellfish pot-au-feu with madras curry sauce and braised beef cheek with Burgundian sauce.Chef shares inspiration behind the menu
Louis-Philippe Vigilant explained in an interview with RCI radio that the menu aims to evoke memories of his childhood in Martinique while honoring Burgundian cuisine. He emphasized the use of local products and spices from the Caribbean and Martinique in creating flavorful, gourmet dishes.Adapting restaurant cuisine for flights
Creating dishes for in-flight service requires adjustments to traditional restaurant cooking. Vigilant noted that preparing meals for Air France involves precise measurements and considerations for dietary needs and an international clientele. He adapted some recipes to be lighter or more modern while maintaining their essence.Collaboration with Air France and Servair
The chef worked with Air France and Servair, the company responsible for in-flight catering, to develop recipes that balance Caribbean flavors with the practical requirements of air travel. The goal was to preserve the taste and emotional experience of the meal despite the constraints of flight.
