Austrian goat cheese with purple color wins praise

Among the prize winners is a goat cheese bite infused with white chocolate and grated coconut, produced by the Austrian company Die Käsemacher since last summer. The cheese’s distinctive purple color comes from ube, a purple tuber native to the Philippines.

Jury praises the sensory and visual experience

The jury praised the product for its indulgent and surprising nature, highlighting its strong visual impact. They described it as transforming the cheese into an experience that is colorful, playful, and sensory.

Italian cheese uses clay shell for aging and packaging

In the packaging category, an Italian cheese called Sei di Coccio, made from cow's and sheep's milk, was recognized. This cheese is aged in a raw clay shell, which functions as both a natural aging chamber and the final packaging.

Clay shell adds to the consumer experience

The clay shell helps regulate humidity and micro-oxygenation, allowing the cheese to mature slowly at room temperature. The innovation also enhances the consumer experience, as the user must break the shell themselves to reveal the cheese, turning the opening into a tasting ritual.
