Le Poisson Volant, a new restaurant and club in the 11th arrondissement of Paris, is set to open during the Paris Fashion Week spring-summer 2027. The venue, designed as a boudoir with Asian inspirations, will transform into a club after 11 p.m. It is the brainchild of Bertrand Chauveau, Paul Henri, and chef Yanxin Yin, who previously worked together on the successful restaurant Cornichon in the 10th arrondissement. The concept aims to combine dining and nightlife in one space, inspired by the mythical China Chalet in New York, a restaurant and party spot known for its vibrant atmosphere and eclectic clientele. Yanxin Yin, trained in Xi'an and Lanzhou, China, brings traditional Asian culinary techniques to the menu, which includes items like grilled pork dumplings, pig's foot wontons, and lobster tartare. These dishes reflect a fusion of regional Chinese flavors with modern French presentation. The interior design, by architects Laure Gravier and Soizic Fougeront of the studio Claves, blends brutalist architecture with decorative arts, featuring aquarium installations by Pierre Huyghe and hand-painted motifs on mirrors. These elements create a visually striking environment that shifts as the night progresses. The lighting design by studio Matière Noire and sound design by FLEiK enhance the transition from dining to clubbing as the evening progresses. The lighting and music are carefully curated to guide guests through different moods and experiences, ensuring a seamless shift from a refined meal to a vibrant nightlife setting. This attention to detail reflects the team's ambition to create a unique and immersive environment. The name Le Poisson Volant, meaning "flying fish," symbolizes the concept of existing between two elements, air and water, reflecting the dual nature of the venue. The restaurant is located at 5-7 rue Marguerite Moret, 75001 Paris.
