Organic wheat quality improves

FranceAgriMer recently released the findings of its study on the quality of French soft wheat grown using organic methods for the 2025/26 harvest season. The study highlights a significant rise in the volume of organic soft wheat collected nationally, indicating a growing interest in and production of organic grains.

Collection size increases sharply

The total national collection of organic soft wheat reached nearly 300,000 tons, with 5,294 tons coming from a second year of storage. This marks a 47% increase compared to the previous year, as reported by FranceAgriMer on September 1, 2026.

Wheat moisture levels are favorable

Analyses of the wheat collection, conducted at the entrance of storage silos in collaboration with Arvalis, showed exceptionally low humidity levels. The national average humidity was 11.2%, with 98% of the collection showing humidity below 13%, which is ideal for preserving grain quality.

Wheat shows strong germination resistance

No risk of lodging germination was observed in this year’s collection. Ninety-nine percent of the wheat had a Hagberg falling time of more than 220 seconds, indicating strong resistance to germination during storage.

Key quality indicators reach high standards

Other important quality metrics also showed strong performance. The average specific weight of the wheat was 79.1 kg per hectoliter, and the baking strength (W) reached 199, both indicating good quality for baking purposes.

Protein content and baking quality are strong

The protein content of the organic wheat was in line with the five-year average at 11.1%. The quality of these proteins was particularly notable, with the gluten index averaging 94/100 and a total baking score of 262/300—6 points above the five-year average. This score reflects the wheat’s suitability for traditional French bread, with 88% of the collection achieving a very good baking quality score.
