Five new restaurants added to Michelin Guide

Five new restaurants in Lyon and Saint-Cyr-au-Mont-d'Or have been added to the Michelin Guide's selection in recent weeks. Three restaurants were added in October, following two initial distinctions in September. This recognition does not come with a star but acknowledges the quality of the cuisine offered.

Le Comptoir in Old Lyon

In the Old Lyon, Le Comptoir, located at 2 rue du Bœuf, within the Cour des Loges, offers French cuisine inspired by the classics of the bistro. The establishment emphasizes regional products, particularly beef from Haute-Loire, poultry, and vegetables from the surrounding areas.

Praised for ingredient use

The inspectors particularly appreciated the work with the ingredients, as well as a potato purée reminiscent of the famous chef Joël Robuchon. This dish highlights the restaurant's attention to detail and its ability to elevate traditional flavors.

Cuisine-à-Manger in Saint-Cyr

In Saint-Cyr-au-Mont-d'Or, the restaurant Cuisine-à-Manger, located in the hotel L'Ermitage on the Mont Cindre, also makes its entry into the guide. In addition to its panoramic view of Lyon, the address is distinguished by creative and seasonal culinary offerings.

Notable dish at Cuisine-à-Manger

Michelin specifically mentions a palomita of red Iberian pig from Castille, accompanied by a piperade and a chorizo emulsion. This dish showcases the restaurant's ability to blend regional and international flavors in a unique way.

Flair explores French-Japanese fusion

The third establishment distinguished in October, Flair, located on the rue de la Charité in the 2nd arrondissement of Lyon, explores the encounters between French and Japanese gastronomy. On the menu, the inspectors noted particularly fried wontons with pheasant and pork, as well as a revisited pork pluma in the style of tonkatsu, a Japanese specialty of breaded meat.

Two Lyon restaurants added in September

Two Lyon restaurants had already been selected in September. The previous month, two other establishments had been added to the Michelin selection. Frazarin, located on the rue de Condé in the 2nd arrondissement, offers Franco-Italian cuisine led by a French chef who grew up in Milan.

Franco-Italian specialties at Frazarin

Customers can find, among other things, mondeghili, Milanese meatballs prepared with veal and mortadella, or baccalà mantecato, a creamy specialty made with cod. These dishes reflect the restaurant's blend of Italian and French influences.

Saône highlights local products

Finally, Saône, near the Théâtre des Célestins, completes this list of new addresses. At the helm, Jean-François Têtedoie develops a bistro cuisine that highlights the products of the Monts du Lyonnais. The lake trout is notably among the dishes noted by the inspectors, alongside local fruits and vegetables.

Diverse cuisines highlighted

With these five new entries, the Michelin Guide expands its Lyon selection and highlights a variety of cuisines, from traditional bistros to international influences. Each restaurant offers a unique perspective on food and regional ingredients.
