Hugo Bourny joins LJ Hôtels & Co

Hugo Bourny, who previously led the kitchens of Lucas Carton in Paris from 2021 to 2026, has moved to Béziers and joined the LJ Hôtels & Co group as executive chef.

Parisian restaurant reopens with new chefs

Following the sale of the Parisian restaurant, which has since reopened under the direction of Benjamin Patou and Cyril Lignac in the kitchen, Bourny will oversee the culinary direction of the group's seven establishments, including three restaurants.

New five-star restaurant planned

His appointment is particularly aimed at the opening of the Château de Lignan, scheduled for the second half of 2027. Located at the gates of Béziers, this five-star establishment will feature a gourmet restaurant, which Bourny will take charge of the culinary direction.

Supporting existing restaurants

In the meantime, the chef will support the various restaurants within the group, including Calice, a Michelin-starred restaurant, alongside Maxime Amiel, former sous-chef of Lucas Carton, and Mohammed Rahbi, already present within the group.
